Cheddar (Snowdonia Cheese Company ‘Green Thunder’)
This cheese is not for the faint-hearted! It is a medium cheddar that is jam-packed with garlic, onion and herbs. The cheese itself is a decent, but not exceptional, cheddar with a very pleasant smooth and creamy texture. The blend of herbs suits the cheese well, but is extremely strong and sharp. The predominant flavours are those of garlic and onion, but there is a leafier taste as well which I could attribute to oregano.
It is rather difficult to recommend pairings for this cheese due to the intense, but well balanced, flavour. I think it is best served with plainer accompaniments that do not compete on the palette such as plain french stick or a Jacobs cracker. As the flavour is fairly close to that of garlic bread, Snowdonia Cheese Company recommend melting the cheese for cheese on toast, or putting it on a jacket potato and I couldn’t agree more. However, I most enjoyed this cheese cold on its own as a guilty snack! This prevents anything from interfering with the excellent combination of flavours as designed by the Snowdonia Cheese Company, as well as the satisfying texture.
I first tried this cheese during a Grate My Cheese yearly meet and rated it a solid 7.5/10.

Agree wholeheartedly. I loved this thanks to its devastating flavour, which is what I seek in a Cheddar, but I agree that came mostly from the garlic and onion. I have pushed this hard at subsequent cheese nights and got mixed results – for some people the overwhelming garlic taste is just too much.
