Singletons Parlick (Sainsbury’s Hard Sheep’s Cheese)
I first tried this cheese at a Grate My Cheese Christmas meet, and of the cheeses that we tried, this was the most surprising. I can sometimes struggle with cheeses made from milks other than cow, but this cheese is truly delicious, It is worth noting however that this cheese was fairly controversial and also received several low scores.
With an extremely strong and nutty flavour, this cheese can almost burn the back of your throat. There is also a strong but pleasant sheep milk aftertaste. The texture is on the harder side, but still creamy and pleasant.
This cheese pairs well with fruit such as apples and plainer crackers. It could also make a good sandwich cheese with rye bread and lettuce.
I rated this cheese as an incredible 9/10.

I usually can’t eat cows milk cheese. I’m lactose intolerent.
But I love Parlick. 10/10 from me!
Interesting that you are OK with sheep but not cow milk. Might have to try to lactose-intolerent nephew with some sheep’s cheese!
Like you, I am a fan of Singleton’s Parlick! I hadn’t tried sheep’s milk cheese until a few years ago and I do really like the flavour – very distinct from it’s cow-based bretheren
