Cheddar (Cathedral City Mature)
This website primarily exists to rate and review luxurious, unusual or exciting cheeses. Cathedral City Mature Cheddar is none of those. However, there is a very strong argument to be made that this cheese is in fact the best cheese we have ever reviewed, or will ever review.
Is Cathedral City Mature Cheddar as bold and delicious as Black Bomber Cheddar? Certainly not. Is it as luxurious and refined as Comte? Absolutely not. Is it as interesting and unique as Cinco Lanzas? Unarguably not. However, of those cheeses, which am I going to buy next? Why, Cathedral City Mature Cheddar of course!
Cathedral City Mature Cheddar is a workhorse of a cheddar, a cheese for all seasons, for all ages and for all purposes. It is brilliant on a biscuit, in a sandwich, or on its own. However, to unlock the true potential of this cheese, you must melt it. I have never tried a cheese that tasted better melted. Whether just on plain toast, grated over a pizza or topping a jacket potato, this cheese has the perfect texture and flavour for melting, producing a pleasant greasy coating.
As an artisanal cheese, and for the purposes of this website, I rate this cheese 9.0 out of 10. However, there is no cheese I recommend more highly for day-to-day consumption. If anyone reading this has tried another cheese that they believe can rival Cathedral City Mature Cheddar when melted, then please comment and let me know!
