Today’s recipe will make a superb tasty salad and doesn’t take long to prepare. The sweetness of a nice Cornish Yarg will elevate your meal to new heights! As with anything, you are free to choose whatver cheese you like or whatever you have to hand but we recommend a good hard cheese with a great taste and for that, Cornish Yarg might be just what you need!

Ingredients – Serves 4

2 garlic cloves (peeled)

1 tbsp capers (chopped)

1 tsp Dijon mustard

2 tbsp Cider vinegar

1 orange (rind and juice)

2 poached eggs (blended hot)

250ml olive or sunflower oil

Salt, Pepper and Sugar (to season)

Kale (preferably curly) washed, ribs removed and torn into small pieces in a large mixing bowl

100g of Cornish Yarg (I recommend the one wrapped in wild garlic rather than the one wrapped in young nettle leaves)

Method

  1. Prepare the kale as described above. Add 1tsp of course salt and massage well into the kale. This will soften the kale; spend some time doing this as it will improve the colour and texture of the dish!
  2. Mix the garlic, capers, mustard, vinegar, orange and poached eggs in a blender and blend until well mixed
  3. Slowly add the oil, bit by bit (as you would if making mayonnaise ) until smooth and completely blended. Taste and adjust the seasoning ( salt pepper and approx 2 tsp white sugar, to taste)
  4. Toss with the kale and leave to sit for about 15 minutes before serving.
  5. Top with croutons and a hard cheese – we recommend Cornish Yarg – or whatever cheese takes your fancy. Keep any leftover dressing in a fridge and use within a few days
