Baked Boy Laity (Baked Camembert)
Baked Camembert has exploded on to the scene in the last few years. The dish makes for a wonderful sharing plate for the cheese lovers of the world. My recommendation today is to use Boy Laity – Cornwall’s answer to the French staple (following on from our recent review of Somerset’s answer to Brie). Boy Laity offers a rich taste with a buttery smooth centre which, when melted, is sure to set your taste buds alight!
Ingredients – This recipe makes 2 proper sized pasties (i.e. each as long as a dinner plate!)
1 wheel of Boy Laity (unwrapped)
1 clove of garlic – finely sliced
One sprig of fresh thyme
Olive oil
Wild garlic (optional)
Crusty bread to serve

Method
- Preheat the oven 180C / Gas Mark 4
- Oil a baking dish and cover with a lid or aluminium foil
- Put the unwrapped cheese in the baking dish and push the fine slices of garlic and thyme into the cheese. Use a knife to cut slots in the cheese to get the flavour throughout!
- Bake in the oven for 15-20 mins
- Serve hot as a sharing dish with your favourite crusty bread
This simple dish makes for a lovely lunch or starter before a lighter main meal. You can add or swap out the herbs if you fancy but we have found that the combination of thyme and garlic add to this delicious dish!
